Celery is best raised as seedlings and transplanted in the tropics, sown from around February to September to run through the cooler dry season. It is a slow, thirsty crop — seed is fussy and can take 15 to 25 days to germinate, and plants need 120 to 140 days to reach a full harvest. Sow the fine seed barely covered, around 4 mm deep, then set seedlings out at 15 to 30 cm apart.

Around Cairns and Mackay, celery rewards patience but demands constant moisture, so gardeners who can keep the water up through the dry do best. Start seed early in the window, and shelter young plants from harsh midday sun while they establish.

Celery's long season makes wet-avoidance the priority: a February to April sowing in the Townsville and Darwin regions lets plants mature through the drier middle of the year and be harvested before the humidity of the build-up returns. Because germination is slow and erratic, raising seedlings in trays under some shade — rather than direct sowing — gives you far better control before transplanting into their final bed.

This is a marsh plant at heart, so it wants rich, moisture-retentive soil and water that never stops. The single biggest failure mode in the tropics is stringy, bitter, hollow stalks, and that comes almost entirely from letting the plants dry out. Deep daily watering in the dry season, a thick mulch, and soil heavy with compost are what keep the stalks tender and sweet.

Grow celery in a position with morning sun and some relief from fierce afternoon heat, which otherwise stresses the plants and toughens them. Feed regularly, as celery is a hungry crop over its four-month run. Some growers blanch the stems by wrapping or mounding to soften colour and flavour, but this is optional. Harvest either by taking outer stalks as you need them or lifting the whole plant once it reaches full size.
